Project objectives

The general objective of the strategic plan is to carry out processes for the valorization of the main by-products and wastes from the winemaking production chain, transforming them into products with high added value and reducing final wastes as much as possible.
This will be done using a circular scheme in order to valorize the noble components of by-products and to reuse wastes to produce energy and to give it back to the vine under the nutrient form.
These operations will be implemented through the introduction of innovative technologies and processing techniques, collecting as many elements as possible to define their economic and environmental sustainability. This is important as the consumer is more and more sensible to production choices having an impact on environment.
The specific project objectives are to:
- Increase the profitability, the competitiveness of the production farms as well as the diversification of its activities thanks to the development of new products with high market value (extracted from immature grapes, pomaces and lees – quality wines from pomace and lees, high quality seeds oil)
- Adapt the process and product innovation to target partner companies
- Produce prototypes and implement operative protocols for the exploitation of by-products and the reuse of wastes in partners farms
- Assess the quality of starting matrixes and new products obtained (chemical characteristics, antioxidants contents, microbiologic and sensorial measures, pureness of bioactive components)
- Increase the knowledge on products and wastes of the Tuscan wine production
- Check the economical and environmental impact of the proposed innovations
- Propose marketing “best practices “to adopt to increase the final consumer perception of quality linked to proposed innovations
- Disseminate the obtained results to a wide number of stakeholders, by using a communication and specialized training strategy to facilitate the diffusion of new technics of exploitation and promote the up-take of proposed solutions in the primary Tuscan productive context
- Ensure an effective transfer of the results through a networking strategy at national level (through National Rural Network) and at European level (through EIP-Agri Networks instruments and thanks to confrontation with PEI operative groups operating in the same thematical area)
